Mondo Knows Facts
Black, green and white peppercorns are the same fruit
Only the harvest time and processing differ between them
All three come from Piper nigrum. Green peppercorns are picked unripe and preserved, black ones are picked unripe and dried so the skin blackens, and white ones are soaked so the outer skin is removed before drying. The different treatments leave different aromatics, which is why they are not interchangeable in a recipe.
